Simple Artichokes

So work has been kicking my butt lately, which leaves little time for blogging among other things. Hopefully it'll lighten up soon, but for now, here's something quick and simple.


Ingredients:
- Artichokes
- Water
- Salt
- Lemon juice
- Garlic
- Mayo

Directions:
- Use a vegetable peeler to get rid of the tough skin on the stem, cut in half, scoop out the furry insides.
- Sprinkle on a bit of salt and a squeeze of lemon and toss them in a steam tray in your pressure cooker and for a about 15 minutes or until they're soft. If you don't have a pressure cooker, boiling, steaming, grilling and even microwaving are all acceptable cooking methods. They just might take a bit longer.
- In a separate bowl, mix mayo, minced garlic, lemon juice and salt to taste.
- Peel each leaf of the artichoke off one by one and dip the ends in the sauce.
- Fight over the stems and heart of the artichoke :)

Told ya it was quick and simple!

I love cooking artichokes in my rice cooker. I can only steam two at a time, but they come out perfectly, and I don't even have to keep an eye on them. I just have to wait for the "ding'' that sounds when they're done.

Sounds so easy, I have never cut them in half like that... only had them barbarian style I guess but what a grand idea! I bought a bag of small ones last week and have been ruining them by roasting - I think this steaming method sounds much better.

I've never used fresh artichokes and recently watched a show on how to prep them... it seems like you throw out half of them??? It seems like such a waste, it doesn't look like you trimmed off as much though??

Elra - I've never made my own mayo because we use fat-free and I don't know how to make a fat free version (I know, I know, *hangs my head in shame*). I'd love to try one day though!

That Girl - Clarified butter sounds yummy too. I'll give that a try next time.

Carolyn - I never thought about using my rice cooker but that sounds like a great idea. That thing is so versatile, I love it!

foodhoe - I find cutting them in half makes it easier to scoop out the furry insides. It's not as pretty, but I'm all about being lazy :)

stephchows - yes you end up tossing a lot of the artichoke and it does seem like a huge waste. I try to minimize how much I cut out, leaving as much of the edible stuff behind.

I can so relate to the work issue, they changed my hours so now I get home later and it is so hard to do the cooking, pictures, comments and posting. I have not had these since I was little and I loved them, I really need to make them and see what I think of them now

I cooked some artichokes for the first time in years last week - just steamed and eaten with some lemon mayo - simple and delicious, just like yours!
