While we're on this seafood kick, I thought I'd share a quick and easy post about oysters too.
I'm not going to into how to shuck an oyster because I'm no expert and am sure google would be a much better resource, but I am going to tell you how easy it is to enjoy these delicacies at home!
Ingredients:
- Oysters
- Shallots
- Lime juice
- Rice wine vinegar
- Sugar
Directions:
- Finely dice the shallot.
- Add the lime juice and rice wine vinegar to the shallots. If it's a bit tart, add some sugar.
- Wash and shuck the oysters.
- Spoon a bit of the lime, vinegar, shallot dressing onto the oyster and slurp it down!

It's been too long since I've had fresh, lovely oysters! Your sauce with lime juice sounds perfect.

The sight of an oyster on the half shell makes me salivate, a lot btw, gosh, that could be embarrassing. I'm glad I'm at home.

Usually have mine with horseradish, lemon juice and some cocktail sauce. Never tried "making" them at home though.
I learned a nifty trick for shucking oysters from the "Made in Spain'' cooking show. Place the oysters in a pan of simmering water for just a few seconds. It will make opening up the shells much easier. A friend of mine also tells me it works if you put the oysters in the freezer for like a minute, too.
That is a beautiful oyster. I have tried to eat raw oysters and clams many times, I just can't get into it. I think it is the mushy texture. I would however like to deep fry that sucker or cook it up in a little bacon fat - oh yeah!
Also I ditto that this is a mignonette sauce.
