Yup, another mango recipe!
I'm a salty kinda girl. Give me a slice of cake and a slice of pizza and I'll pick the pizza 99% of the time. And as you can see from my blog, I generally don't make sweets. Fruit is sweet. So leave it to me to try to turn it into something savory =)
One tip I have for this dish is to err on the side of not ripe enough over too ripe. Heating the mango will mush it up a bit, so the firmer it starts off, the better.
Ingredients:
- 1 mango cut into slices
- 1 chicken breast cut into bite size pieces
- 1/2 onion sliced
- 2 red chilis sliced at an angle (red bell pepper can be used too if you don't want it too spicy, or more chili or red pepper flakes if you want even more heat)
- Bok choy cut at a bias
- Cashews
- Salt
- Corn starch
Method:
- Marinate the chicken in corn starch like I did for the pad thai. You can also add soy or xiao shing wine or other flavoring if you'd like, but I didn't this time around.
- Heat your wok/pan until almost smoking.
- Add a splash of oil and heat through.
- Toss in the chicken and keep it moving in the pan until mostly cooked.
- Add onions and chili and some salt to taste and toss it around. Then add the bok choy. And lastly the mango and cashews. This should all be added in pretty quick succession and shouldn't be left to cook for too long since they don't take long to cook and you want all the veggies to remain crunchy.
- Serve over rice.

Shrimp, mango and avocado soft tacos
Hmm...the jury is still out on this one. The mango that I used was overripe and so it made it too mushy. I see the potential though. I truly think this could've been good with a better mango. Anyway, here's how I made it...
Ingredients:
- Shrimp
- Mango
- Avocado
- Tomato
- Black beans
- Cilantro
- Salt
- Lemon or lime juice
- Garlic
- Tortillas
- Jalapeno (optional)
- Onion (optional)
Method:
- Peel and clean the shrimp. Toss it with a bit of salt and minced garlic and saute or grill until cooked.
- Dice the mango, avocado, and tomato. Chop the cilantro. Dice the optional jalapeno and onion.
- Mix everything together and put it into a warm tortilla

Mango, Black Bean & Carne Asada Burrito
Sorry for the crappy picture, but it sure was yummy! And super easy too.
So I considered doing a mango chicken stir fry with the leftover mango from my Grilled Salmon and Mango Salsa post, but the hubz made some carne asada to make nachos to eat while watching basketball, so I got a great idea - mango, black bean and carne asada burritos!
For the carne asada, the hubz said he just took london broil, salt and peppered it and grilled it up. Not exactly authentic, but it was very tasty! I just added some diced mango, some canned black beans, a squeeze of lemon, some very finely diced onion and and some salsa and wrapped it up in a burrito. Easy peasy and yummy in my tummy!

Grilled Salmon and Mango Salsa
We bought two mangoes a while ago but they weren't ripe yet, so I've been waiting to make this for a while now. I still have one more mango that I haven't decided what to do with yet. Any suggestions?
Anyway, with our first mango, we made grilled salmon with a mango salsa, baked sweet potato fries and a sugar snap pea stir fry. The mango salsa was great and could be used on so many things. Grilled chicken, pork chops, a nice salad. So many possibilities!
The sweet potato fries were REALLY sweet. A bit too sweet in fact. Next time I'll probably make regular potatoes and save the sweet potatoes for "dessert".
Overall though, it was a great meal.
Mango Salsa -
- 1 mango diced (like the picture below)
- a few super thin slices of onion diced
- a pinch of salt
- a squeeze of lemon or lime
- chopped parsley (optional)
- a pinch of sugar or honey if necessary (for mangoes that aren't quite ripe enough)Mix all the ingredients together and let it sit for a while for the flavors to infuse each other. If you'd like, you can obviously add other diced fruits to the salsa. Pineapple or tomatoes come to mind a some good additions.
Salmon -
Sprinkle with salt and pepper, and grill for a few minutes on each side until the light pink comes up about 1/3 of the way. I prefer the center to be slightly raw but warmed through, but feel free to cook it more or according to your own preferences.
Baked Sweet Potato Fries -
Peel sweet potato and cut into matchsticks. Put in a bowl and drizzle olive oil, sprinkle salt, pepper, paprika and cumin (or whatever spices you like) and toss to coat. Lay it in a single layer on parchment paper or a silpat. Place it in a 400deg oven until cooked through (maybe 30 minutes? I wasn't really paying attention). You can also put it in the microwave for a bit before putting it in the oven to speed up cooking.
Sugar Snap Pea Stir Fry -
Heat some oil in a pan. Add crushed garlic, add sugar snap peas, add a few pinches of salt and a squeeze of lemon juice. Stir until warm and cooked but still crunchy.
